Well, first you figure out where you want your outer walls to be. If there's terrain, try to conform to it somewhat, instead of just flattening all of it. Try to avoid being to rectangular with your walls, as real castles tended to be a bit more fluid in shape.

Walls themselves are pretty easy, and depending on where on the wall you want the gold line (if you want it) there's a number of ways to do it (see pic). The first and second are easier to send paths through without removing clearances. I went with the middle one so that the line on my wall towers would be at the same level as the line on my walls. I used raised Crazy Pavings paths for the tops of my walls, though if you want stuff on your walls and don't want to remove clearances then the plain blocks are better. Pick the color (grey or brown) depending on the environment. Mine started grey, but I realized that the brown would fit in better.

Now that you have your walls (or at least have marked where they're going to be), figure out where you're going to put your keep. Generally the keep either is integrated with the walls (smaller castles) or is an independent structure in the middle (larger ones). Once you know that, mark your entrance points through the walls.

Since you know where your entrances and the keep are, it's time to put some towers on the walls. Put two flanking each entrance, through the two towers do not have to be the same height and shape (as you can see, mine are not). Then space out others, placing them at semi-regular intervals at places where the walls poke out or dip in more than usual High points in the terrain are also good places for towers. I used the basic doors and the small crenelated wall to make the doorway sections into my towers.

Finally, for the keep I recommend looking at some real castle keeps, and trying to make something like them. The keep will be larger for a larger castle, obviously.
