We know very little about The Bloodletting, but we do have an idea that it was one of Symphony of the Night's early names, probably back when it was a Bloodlines sequel.
Magazines at the time indicated that the 32X game was a form of Dracula X, so it was probably another twist on Rondo.

Biggest misconception of the franchise. There never WAS a Castlevania game called "The Bloodletting" for 32X; this was most likely an early localized title for Symphony of the Night, back when it was still a sequel to Bloodlines. IGA himself came from the 32X project, and he remembers that it was canceled before it even got a title. If gaming mags back then are to be believed, the 32X game was another alternate version of Rondo of Blood or Dracula X. Yeah, from the few sprites we got of the 32X game, Maria looks older, but that was probably just a redesign like SNES Maria since IGA vaguely said something about reworking characters to fit western tastes. All in all, no indication whatsoever that the 32X game was intended to be a full-fledged sequel, maybe just what Dracula X was supposed to be before they had to focus on one platform. The fact that people are STILL TO THIS DAY imagining a 32X sequel called "The Bpoodletting" just goes to show you wikis' power of suggestibility. They know they're wrong, fucking correct it already you gatekeeping fucks.

This is true. I think IGA wanted to do a Dracula's Curse remake. Oh well, 'least we got Curse of the Moon out of it.

No. "The Bloodletting" was a prototypical name for Symphony of the Night, possibly dating from before IGA was involved, when there were supposedly more Bloodlines elements than Rondo, as he doesn't remember that title. Magazines at the time called the Sega 32X game "Dracula X" and it was supposed to be released shortly after the SNES game. It was apparently a port of Rondo of Blood, but it's unknown if it would've been a faithful conversion or closer to the SNES game - the Americanized sprite redesigns of Richter and Maria plus a rival character indicate it was going to veer off in its own direction. Richter's redesign became the basis of Zombie Trevor, and that's all that's really known about it.
Wikis just continue to call it "Bloodletting" instead of "Dracula X" because of some misplaced sense of tradition I guess.

What the hell? Why don't wikis fix this shit already? The fanbase has been using the wrong name all this time and they know it? Bullshit. Is it some misplaced sense of pride or something?
Also, if The Bloodetting is just pre-Rondo Symphony, that may explain why the Richter's stage is called "Bloodlines" - it might not be a mistranslation, but rather, a proto-localized remnant they neglected. And this means a Saturn version was planned early on..interesting. Was it canceled then other devs picked back up?
