I'd say it's a little more challenging as they added trading, capitalism, shit you can do on the world map to unlock hidden areas, and the developers taking further advantage in the SNES' capabilities (pic related: it's a boss you have to beat by chucking snowballs at while he does that taunt).

The DK coins are not simply found; they're used as a shield by an enemy called Koin. All you have to do is get rid of him...by cleverly rolling a (spawned) steel barrel at him while he's pointing the coin/shield away from the barrel.

Furthermore, as was mentioned before, the BGM is more atmospheric (awesome IMO) due to the return of Eveline Fischer. (She did some of the atmospheric bgm on DKC 1; like the temple).
