As a general rule, use ink ribbons wisely. Only save after you've made some sort of progress. As you play, and die, you'll realize how trivial some rooms can become which can dramatically cut down on how frequently you save. If you die and reload, try and think of how simple and efficient you can make your path; see how many things you can take care of in one trip and how few bullets/herbs you can use along the way. The more you do this, the more manageable the game becomes later.

Zombies in RE1 have a fatal flaw that makes them very easy to dodge. As long as you keep some distance while they approach, eventually they'll turn 45 degrees or so away from the player giving you a perfect path around their backside. You can dodge plenty of them without this trick so use it as a last resort. Find a lone Zombie to test on and you'll see what I mean. Zombies in general can't fully turn a 180 and grab you so their back is usually a safe spot.

Simple stuff:
-Aim up with shotgun at close range to decap Zombies
-Reload weapons in the inventory
-Thoroughly inspect any key items you get
-If you're playing as Jill, her different Bazooka rounds work better on certain enemies but Acid is generally the most valuable
-Some secrets/endings depend on what path you've taken and the choices you've made
