and just for the sake of posting something other than a shitpost I'll recommend Top Gear series especially 2; or if you want something more laid back and easy to play Lamborghini American Challenge but in b4 "I don't play racing games"

Top Gear 2 uses it really well as it's a mix of mode7 and other methods. Mode7 is only used for the turns in the road here. Great fucking game, both technically and just on a game feel.
