Start with 3 for open-ended gameplay, 5 for best story, or 8 for best graphics and good gameplay+story.
Don't ever start with 1 and don't play it until you're a huge fan of the series already, and play 2 and 7 dead last.

Note A: people say that you need to play DQ1 to properly enjoy 3. This is false. 1 and 3 reference each other, but the reference works both ways and is completely unimportant to enjoyment of either game.

Note B: DQ4, 5, and 6, the "Zenithian Trilogy", are practically unrelated. Each has a land in the sky and a set of equipment and that's literally it.
