No console prior to 6th gen supports Component to my knowledge. They either have RGB or go up to S-Video. N64 is part of the minority that only goes up to S-Video unfortunately but it can be modded to support it.

Also depending on how many consoles you want RGB out of, you could buy HDRetrovisions Component cables for SNES/Genesis, as they work as all-in-one converters from RGB to Component. They're a little on the expensive side (~$50 ea.) though, and you'd have to wait for the next shipment. I splurged and got the latest shipment, and the cables looks absolutely gorgeous on my Trinitron. Pic related.

But S-Video is absolutely the starting point for decent video quality, sticking with it is just fine for people who aren't A/V nerds like us. Just make sure you get good S-Video cables. First party cables are always a safe bet but there are some third party suppliers you should watch out for, as they have poor shielding.
