Quake had to be more "hardware considerate" when Doom 2 was more of the opposite: Any "doom is hard to run" concerns were met with larger maps and enemy counts in the sequel.
Custom Quake mods/maps can overcome this "small and beefy roster" issue but at that point it's fair to compare it to Doom with modern mods. Much of what it arguably "has over Doom" (weapon balancing, switch speed, full aim shooting, movement mechanics) can be emulated and improved.

Doom wins for me but Quake isn't far behind. For what it's worth I find that Doom and both Quakes are better with their enemy and weapon rosters than the Build games, and I like all those too.
