If you're playing a game that's difficult and frustrating even when you beat it, then you're not enjoying it. You're just tolerating it.
And if you're hesitating to play it again, then it's just not a fun game at all. A good game makes you enjoy playing through it. A bad game makes you feel relieved when it's finally over.
I'd rather play through a game multiple times in a month, than take an entire month of toil to beat a difficult game that I'll never want to play again.

>Game doesn't let you pick the character/vehicle/difficulty you want on your first playthrough
>You have to beat the entire game and waste your first impression of it to unlock them first
How do you honestly feel about games that do this?

This is very true. I think a Legacy of Kain game that leans into an RPG style would be really cool. Given the series emphasis on narration and writing, Dragon Age-style dialog options would fit really well into LoK.
