Actually you can.
If you drift for long enough, once you let go of the drift your car gains a temporary boost (if done correctly your kart will "freeze" at an angle) which gives prevents your kart from slipping, and allows you to temporarily drive off-road without losing much speed.

There's also a lot of techniques surrounding the boost, together known as NBT. If you look up some NBT time trials on youtube you can see some broken shit.
