Ironically the most game-y Evangelion game on the Saturn is the one that might initially seem like a non-game: Digital Card Collection.
It has a bunch of mini-games that you need to play over and over to get new cards and complete the virtual folder of virtual cards.
The mini-games aren't that great though, they have the kind of replayability as the Eva mini-games from the collector's discs for Windows, which isn't much. But I enjoyed the Magma Diver one and the Pen-Pen one (if anything because of the comfy pre-rendered graphics).
Still, the best part of this game is all the content it has that you can unlock. The cards themselves contain short video clips (like, character-specific, Eva-specific, Angel battles, etc), which I can imagine was actually cool to see back in the 90s, when digital videos were novel. You can also edit a series of clips to play one after the other if you want to just sit back and enjoy some artifact-driven FMV soul.
But the actual best part is the 4-koma comics you can unlock. They're all pretty funny and I don't think they can be found anywhere else outside of this game.
