They changed the physics in All Stars. I think the NES version is something you would enjoy as a piece of video game history, in all it's shitty graphics glory.

All Stars SMB is something that's enjoyable on it's own merit even today as a good 2D platformer. Basically you play NES SMB because memes, you play All Stars because you want to enjoy the gameplay.
