My favorite levels are the Egypt levels, the ones in TR1 and the beginning ones in TLR. I also like The Cistern and Venice from TR2. I have yet to play Unfinished Business even though I have the disc.
Looking back, all TR3 levels feel like a chore, though Thames Wharf and Area 51 at least look interesting.
