S-Video won't look that much better over composite due to a few of the console's filters, namely anti-aliasing and video interface (VI) blur; and as far as I know, all N64 games pretty much had it. One way to get around AA is with an Gameshark to turn it off, but some people get put off by the amount of dithering on some games (it's not as bad on a CRT). VI can only be turned off if you're specifically using the N64RGB's RGB signal (won't work in S-Video) or had the console modded to support HDMI. tl;dr If your monitor supports RGB, it's a pretty noticeable jump, especially with the VI de-blur enabled. I'll see if I can take any decent pictures of my BVM.
