Kakyuusei's my favorite game of all time; fell so hard for almost the entire cast.
It's superficially similar to Tokimeki Memorial in regards to how the dating works, but a lot simpler, without the character stats and highschool life (clubs, tests) parts, but the feeling of progress with the girls is really great.

The game doesn't end at confession--well, really, there's no strict "confession" or couple/not couple status; it's more free-form than that. A large chunk of the game takes place after you're already lovers.
It also has this really great post-date make-out mode which serves as a progress bridge between early dating and actually having sex; one week she's nervous about holding hands, the next week she'll let you kiss her, the next week she'll let you feel her up, that sort of thing, and trying to do something they don't want will lower their affection level (different pacing depending on the character).
Later you can also tease them with that after you're already sleeping with each other by choosing to take them straight home after a date instead of to a hotel like usual, and then do a full make-out session on their doorstep before saying good bye for the night that leaves them wanting more.

There's enough time in one play through to be a cheater and date multiple girls at once if you want, and I tended to play that way. It's possible to get caught but the odds are low.
