I made a little video on this very topic if anyone is interested. I go over every version of the original and REmake:

TL;DR: For the original game I like the Director's Cut (Non DualShock version) for PS1 with the original soundtrack, the PC version with the Classic REbirth patch, and Deadly Silence on DS. All great ways to play, although the DS version's backgrounds can be pretty butt-ugly at times. The QoL features in the Classic REbirth patch are great, like door-skipping and quickturns, although I personally don't use them. Director's Cut on an emulator is usually just how I replay the game these days.

For REmake, I like the original GameCube game on a CRT or the Steam port. There are areas of the HD ports and Steam release which look noticeably worse than the original game, mainly the infamous bird cage room and a few others. And black levels are pretty crushed on the whole. But there are also just as many rooms and enemy models which have been given a tremendous facelift and look really great. I'd say its about 50/50. But if you're gonna play a version of REmake on a flatscreen, play the Steam port. On the whole, the old pre-rendered backgrounds of the GameCube original do look worse on an LCD compared to all the nice re-built areas of the HD ports, so don't bother with Dolphin. Playing the GameCube version on a CRT still looks fantastic though.

I've been replaying pretty much every version of Resident Evil 1 and REmake for the past few weeks since I was making a video about it. I love it, just one of those games I never get tired of. Not retro but I also have a renewed appreciation for the DS port, it's pretty good.
