Your image proves that the CRT is getting Red, Green, Blue, and Composite video, so the only thing that you're really missing for a proper image is ground.
I'm assuming the mod you're talking about is just for composite video+stereo audio which would really only consist of mounting RCA jacks and running wires from the video encoder for video/front headphone buffer for audio.

Thinking about it again though, do you have the headphone cable connected to the system?

If not, does connecting it change the problem at all?
If you do, I'd say it's almost definitely a problem with the cable, as the front headphone jack also has a connection to ground and will at the very least give a smeared but proper colored picture.
