I personally see Sayonara as the weakest because the physics feel too easy in some areas(wall climbing, general slinging) and some techniques are almost gone(rocket jumps).

Granted the game is built around these changes it just feels overall easier and more loose; losing that original "git gud" feeling the other two give. Especially with the new field select instead of the traditional survivor mode being default.

Although causally I'd say it's the best because of all those changes plus the characters, costumes, and all the extras it gives you.

I guess the DS version would have the most content, having both the SFC and PS1 games included.

But yes, Sayonara/Yumi is the one with the alternate characters. Regular Kawase is regular Kawase, child Kawase and Emiko are sort of easy mode characters who can restart from checkpoints if you fuck up, and Nokko can move in slow motion during the game's time stop feature, whereas other characters would be frozen in place for a few seconds with the idea being that you use that time to press down the right direction to throw your fishing line.
