as an outsider, what's the appeal of the Ultima series?

I'm constantly being filtered by this series. I don't know if it's the choppy animations or the weird perspective, but almost every Ultima game I've played has made me put it down within a few hours and never pick it up again. It's not the difficulty or RPG mechanics that get me, Daggerfall and Fallout are some of my favourite games which I've seen filter people due to their difficulty, but for some reason the Ultima series just doesn't click with me. I love the concept, the wide open world, open-endedness and medieval Fantasy setting but actually playing these games feels like a chore. Is there something I'm missing?
