And you mean 'the NES only outputs composite unless you replicate the functionality of the PPU in a FPGA'.

NTSC is the very most it ever generates, even internally, as a normal NES.

Those are BNC connectors. Every PVM has those and only those.

For RGB, you need a SCART -> BNC breakout cable. Or you can modify your consoles to output the signal over RCA jacks. You'll want pic related for the second option.

If you're just being cheap you can just use s-video cable, but it's a waste of a PVM

PVM's use BNC connectors. They're essentially RCA connectors, but with a spring lock to keep it secure. You can buy BNC-RCA adapters for cheap (pic)

As for all those systems, the monitor takes Composite, S-Video, Component and RGB. Most of those systems have multiple options for what they can output.
