What applies to interchangeable products (which is what economic theory assumes is being compared, not unique items) does not necessarily apply to art, which is where your assumption fails. Sometimes it does, but it cannot be applied consistently.

A single person can make "good" art better than a group of people can. Sometimes not. Sometimes a person that can make good art consistently can't make good art anymore. Sometimes someone that makes crap art will make a once-in-a-lifetime masterpiece and not be able to create anything else as good. Etc, etc.
