I've been playing this recently, and just got into the final end chapter. The spritework is gorgeous, and the chapter system gives the game a constant sense of momentum as you pass through the early game -> mid game -> end game structure three times in rapid succession.

Suikoden II, Final Fantasy Tactics. These two are the bar by which I judge all other RPGs. Of course there are tons more that I love, pretty much everything on PSX was fantastic

My favorite is probably Rudra no Hihou. It took a bit for me to get into the game but man, those later bosses were insane. Also the music and the setting

Treasure of the Rudras is really nice, being one of the really really late SNES games that never made it out of Japan. It looks even better in motion.
