Well I take issue with your SNES recs.

Do not, I repeat, do not play any patch using the US version as a base. Play Spooniest's "J2Evisceration" if you want a complete restoration due to using the JP ROM.

This is a lazy edit of the base RPGe patch without Leet Sketcher / noisecross corrections. Spooniest's "Legend of the Crystals" patch got souped-up recently and is looking like the definitive way to play.

Overrated, being first at something isn't always good. Play ROSE (Revised Old Style Edition) or hairy_hen's retranslation when the update comes out.
The rest depends on what type of gamer you are. If you play VANILLA, just play the originals. These games mostly aren't designed for modern HD and so graphical faults that were previously hidden become more apparent, especially in VII's case. I think VII's graphical mods look weird as hell with battle proportions in the overworld, but you do you. VII's retranslation is available for PS1 too BTW, though I haven't tried it so I can't speak for its quality over the original.
