Color theory and high contrast as a consequence of limited color palettes, both in PCs at the time and in real life cel art where things were hand painted. That eventually gave way to excessive use of CG gradients, which added more color but caused detail overload so nothing "pops" anymore. This causes the end product to fall flat at conveying emotion since a lot of it is just background noise.
