Star Soldier on the N64. It's like 5 bucks I think.

Great feel, forgiving gameplay, fun bosses, and has a combo system like DoDonPachi.
Bottom line is it presents some of the core fundamentals of shmups but in a more forgiving way.

Star Soldier for the N64 goes relatively easy on newcomers, but still challenges you with the fundamentals of shmup games, so it's a great start. The gameplay itself is also pretty satisfying (i.e. the simple act of gunning down hundreds of enemy ships).

Tyrian 2000 is easy too, and very engaging, but it doesn't play much like a real shmup. More like an upside-down bullet hell. I definitely recommend it, but I can't say it will help you appreciate the genre more.

Also, I found Jamestown(not retro) to be very enjoyable, with a really smooth learning curve. Other people didn't seem to like it very much, though, so you may want to watch some reviews first.
