Why the fuck don't my emulators look exactly like original hardware?

I'm looking at longplays on YouTube and comparing the exact identical scene from the video to my emulator (literally full-screen alt-tabbing back and forth), and while I can adjust the overscan and aspect ratio, the color, brightness, and inking is slightly off. And this is using mesen and bsnes which are supposed to be essentially perfect emulation.

Like in Mario Bros with mesen, the sky and bush at the beginning of 1-1 are a different shade and the block rendering looks totally different (tone and inking are totally off). I have tried every filter and shader and I just can't get identical color and identical linework as the original hardware.

Also on Donky Kong Country, the blacks in the background of the dark rain level are completely crushed all black on original hardware longplays, while mine only show as very dark and you can still see the faint green plant background through it in bsnes

Is this just compression from YouTube or the recording method, am I doing something wrong, or is this inaccurate color just "normal"?
