I was always under the impression that Jenova is essentially mindless and only driven by instinct, whereas Sephiroth also has Jenova's instincts but has a human mind that he can rationalize what he's driven to do and why.

FF1 - PSP is the best "modern" version to play, but PSX on normal difficulty or NES is the best way to get that classic experience the game was balanced around with a better MP system.

FF2 - PSP if you want it to look pretty, Famicom if you want to abuse leveling mechanics.

FF3 - PSP or Famicom are equally valid for varying reasons; I personally prefer the Famicom version.

FF4 - PSP for the best 2D version, DS for the best 3D version unless you can stomach playing it on Steam with its garbage UI, or Android / iOS.

FF5 - GBA has a fantastic parody script and bonus classes, while SFC has a higher quality soundtrack and graphics. There's a patch for the GBA version that fixes all of its problems if you're into that.

FF6 - GBA has all kinds of extras and quality of life improvements; every version after is based on this one, but looks like shit and adds nothing newer than the GBA port does.

FF7 - PSX has better shadows in battle, every single version after is based on Eidos' PC port which was based on an older build of the game, but it has a slightly improved script, and the characters have mouths at the cost of those barely noticeable battle shadows.

FF8 - No version of this game is worth playing and they're all the same anyways so whatever.

FF9 - PSX version looks better than the more recent port because the port filters all the backgrounds, and it renders high quality models with low-res textures that look like ass. The port isn't actually THAT bad though if it's the only way you can play this one.

FFT - The PSP port adds extra classes, but the PSX version has a more stable framerate. There's a patch for the PSP version that fixes the framerate though.

A hacked Vita and PSP can emulate or natively run all the best versions of the classic Final Fantasy games if you want them all on one device.
