I use an Onyx Boox Max3 eink tablet with its builtin note taking application.
I designed a bunch of background templates so I can map without having to write coordinates.
Obviously that's only suited for games with a fixed grid. Having some way to tell your coordinates like DUMAPIC is extremely useful.
When I played Wizardry 5 and 6 I used A3 grid paper (centers from exercise books) and tried to guess which direction things went. On occasion I had to copy the map to a new sheet and shift the center because I reached the end of the line.

Here's my current progress from Wizardry Gaiden 2. I'm wrapping up floor 11 after clearing the first half.
