you're right, but it's a well-known concept in art. you could make a hyper-detailed photorealistic painting, but it gets boring after a while. theres no imagination in it. it's just "dry" and soulless. on the other hand, you could make a surreal painting that will not be very accurate, but it will be much more interesting and fun to look at.
it's like literary description of weather filled with metaphors VS a dry description of weather seen in a forecast. the latter is art, the former isn't.
this is part why old graphics have this abstract art, surreal feel to them. no matter what you did, you couldn't get completely realistic with it. the more limited it was, the more surreal it felt. Atari games look like borderline abstract artwork.

in a perfect world, there should have been an extra gen of consoles between the 4th and 5th gen. one that would have good 32-bit 2D, but only low poly untextured 3D. that way we'd get a whole lot more good 2D games and aesthetic 3D games like Virtua Fighter 1 and Virtua Racing, without rushing to mediocre textured 3D.
