I won't deny Spyro is a baby mode franchise, but each one is a "total package" to me, the easy gameplay gets carried by everything else being top quality. For 1 in particular a lot of my enjoyment comes from self-imposed challenges, I'm shit at speedrunning but it's hard for me to even play the game in a casual manner anymore.
>beat this level before the music track loops
>get to X part of this level before music reaches certain point
>beat game without dying
>beat game without getting hit
>collect everything in level without backtracking/retracing steps
>kill thief within like a second after he starts to run
>kill all druids in Magic Crafters without any of them raising themselves up on platforms
etc etc

The Spyro trilogy. Something about the the first game in particular makes it endlessly replayable for me, it's the only vidya I've ever been able to beat multiple times back-to-back without getting bored of it, like it triggers some sort of autistic idiot savant state.

I think it has to do with its ratio of content vs. length; it lasts a few hours, there's a generous amount of levels, but none of them are too huge, and Spyro moves quickly enough that you can beat many before their music track even loops, so there's a constant influx of new environments, a fresh one every few minutes, all of which feel distinct thanks to the artists' devotion to color theory and Copeland's efforts on the OST. The sequels are great, too, but I feel like they drag on a little too long, 3 especially with some of its missions and the other playable characters.

Depends. Spyro 1 is one of my favorite games. I found 2 to be more bloated and less linear than the first game. I think it's still a good game, but I'm hesitant to say I enjoyed it. It has odd vibes to it.

The controls in 3 somehow feel the worst, worse than 1's no analog controls. The texture work is sometimes too bright and can be a pain to look at and collecting gems can outright feel like a chore, especially if Sparx is gone. I almost never went out of my way to 100% a level in Spyro 3. It has good ideas, but I honestly can't tell what the fuck I'm looking at or doing half of the time.

Really, just play them for yourself and come to your own conclusion, they still have things about them that are worthwhile. I don't really understand what I dislike about 3 half of the time, so maybe the more people that play it can properly put it into words for me.
