I dunno, I like the fact Stadium games are battle-centric. If they were normal RPGs, developers would have had to sacrifice some things in order to achieve others. For example the big maps a game like that would require would take a toll on the Pokemon models. One of the most impressive things the Stadium games have is the detailed pokemon models and its animations, which still look great even today compared to the stale modern pokemon 3D animations.
So, we'd end up with a 3D full RPG, but with worse pokemon models, and probably animations would be very limited.
Also, when the Stadium games came out, it wasn't too long since the Game Boy games were released. They served their purpose perfectly as additional content for the GB games (even better if you could use Stadium while you were playing the GB games, due to the box management and pkmn management on the Stadium games).
I know where you come from though, as a kid I was also disappointed in Stadium, and only rented it for the mini-games in multiplayer, but now I can appreciate what they did a lot more. Unique games.

Still the best pokemon animations.
