I don't get it either, I think it's just normies in general have been tricked into thinking 'new = better'. Hence we have people saying 'I love this old game, it needs a REMAKE so badly!'
They don't say why, or why they don't just enjoy the old game, but just insist it needs a remake.
Anyway, as for the OP's topic;
I tried playing Street Fighter 6 with a friend recently, and trying to explain all the different mechanics and nuances of the game was just too much. We ended up going back to Super Street Fighter 2 Turbo and similar. Those games had a high skill ceiling but they were so much more intuitive to explain. I don't mind games like SF6 existing, but there's not much in the way of 'old-school' design in fighting games anymore. I love just having lifebars and maybe a super bar and that's it. Those games still took decades to 'master' and people still find new strategies to this day.
