My first thought was "why not hack it for RGB input and run the video signal from the retropie to that"

BUT

A cooler project would be to build a controller with the retropie inside of it that can broadcast via VHF/UHF. Like on this page:

There are small transmitters out there that could be worked into a controller. It would be kind of a large-ish controller but it would definitely work. And the video quality ought to be excellent, at least as good as composite video, maybe even better. I recall the video quality on old antennae broadcasts from our local PBS stations was always extremely clear.

Such a wireless transmitting controller-console combo would let you use old televisions like this and get better quality out of them than was ever possible back in the day with old systems.
