DVI-I explicitly supports Analog RGB output as backwards compatibility for VGA output; Without that support, it's just DVI-D.

It does seem to be getting dropped from more and more GPUs as time goes on, in favor of pure digital options.

It may depend on the vendor on whether they keep support for it, but a quick look around seems to suggest that Nvidia has support for DVI-I even on the 980s, where as AMD seems to have moved to DVI-D only for some cards but left it available on others: I see 290s and 380s with DVI-I, but 360s without. If you're looking at AMD for GPUs and have an interest in using a CRT monitor, I'd definitely suggesting keeping an eye on which specific version of DVI it supports, as there doesn't seem to be much of a pattern.

This only applies to VGA RGB, support for low-res(sub 31khz) RGB output is less clear cut.

If they were something that I'd be likely to run into to actually start a collection, I'd be more interested, but as it stands I have never actually seen an LD or player in person.

I will say that I wouldn't mind finding something to play on my S-VHS VCR. Or interesting stuff on VHS in general.
