I've been meaning to get into the series, since I think Kairi is pretty cute. The games feel like they require quite a substantial amount of time commitment. What would I be missing out on if I choose a later edition to start on the series?

They made an outstanding pick with Utada Hikaru. Knew of her before the games, and she was already a popular J-pop artist, but the games did expand her popularity a bit more overseas. I have not played the games yet, just watched my friends play here and there, but I think this is the song for the 2nd game which has a very cool video that has an animated section reminiscent of a Macross Plus look to it: https://youtu.be/kT-YtuzNqIY

I get what you mean. It was a solid look, but I guess they had to move to a ubiquitous engine to quickly produce something for modern tastes given the time that has passed. Using Unreal Engine means that it is a bit faster to use some default values and adopting that look in some way as it would take a lot of work to avoid that aesthetic. I haven't played the games yet, but Kairi is a motivating factor enough to get started and I think they did manage to find a good in-between look that is pretty appealing to my eyes.
