It's simple: atmosphere. I've said it many times, and I'll say it again, SM64 is one of the only games of its kind that has actual atmosphere. Even when you look at later Mario games, they're filled with bubbly music, typical cutesy shit and platformer tropes. SM64 isn't like that. You feel like you're exploring this surreal, lonely world filled with abstract environments and strange creatures. The feeling of wandering around the castle grounds with only the sound of wind, water and birds chirping, or exploring a dark lake with a sunken ship and giant creepy sea monster waiting at the bottom, these are feelings most platformers can't conjure up. It's the feeling of real mystery, wonder and exploration.

On top of this, SM64 has one of the best movesets of any platformer. Most platformers take the Banjo approach, which is giving you a set of unique, flashy attacks/moves which are accessed via different button combinations, but SM64 gives you a way to chain them together and use them to build inertia. This means that your abilities become reactionary and dynamic rather than just static button combinations. It results in a game that is extremely fast-paced, versatile and gives you a wonderful freedom of movement.
