They've always picked the episodes they liked the most to sub first.

I started watching a couple years ago and the subs were practically scattered over all seasons with huge gaps in between.

The ability to watch the series chronologically is a very new thing.

One episode per month is pretty much the average, but there can be longer pauses like we have right now because the main subber worked on Kan's new book.

I usually just watch Gaki no Tsukai (webm related) while waiting for new Kacho subs.

Gaki no Tsukai is pretty awesome. Basically anything made by Downtown is great.

There are multiple independent subbing teams working on it, so it's a bit messy to find all subs

The fan forum on www.gaki-no-tsukai.com is a good place to start looking.
