Here's a discourse of my Descent into the World of Arcade GnG.

Ghosts:
>heavily reliant on RNG, the dragon bosses will fuck you more often than not
>creative level designs with lots of platforming with verticality in mind
>decent weapon balance, but the game forces you to use the worst one
>six stages and a true last boss final stage
>graphics still hold up today for 1985

Ghouls:
>a bit fairer in the RNG department, though it's still tricky
>mediocre level design, stage 3 sucks and stage 4 is cramped
>better weapon balance, and can use whatever one you want
>only five stages this time, but they're larger
>music is more varied and memorable

Overall, I'd have to say I enjoy playing Ghosts much more than Ghouls.

Spin-offs like Arremer and Maximo are fine, too.
