If you still want to play an action game, Bionic Commando for the NES works pretty well.

Map the four directions to WASD and the a and b buttons to Q and E.

When swinging you don't need to worry about hold the direction while in the air to get over gaps, which always seems like the biggest problem when trying to play most games one handed.

You can probably get this to work well with a lot of NES games.

Why in the holy mother of fuck aren't there any good romhacks of this game, but Super Mario World, Super Mario Bros 3 have a shitload of user-generated levels, and FUCK even Super Mario 64 has some level hacks.
