I would have totally bought a religious FPS game, that sounds rad. You play as Jesus who has come back for revenge

Amid Evil and Doom 2016 had pretty good bosses. Ultrakill's pretty neat so far.
Those are exceptions to the rule, though.

They're grade A bullshit. At least you can fuck with their pathing on walls and shit.

Probably not the best starting point, but I can't blame you for having fun.

Just realised I forgot about Vanilla Essence, which basically is a quick configuration for settings similar to vanilla Doom. I'd suggest enabling movement interpolation in the settings, unless you like playing at 35 fps.

Anyway, software rendering does arguably improve visuals on vanilla-centric maps, especially in regards to texture repetition, as it dithers visuals and automatically re-shades based on camera distance (can't remember the technique name for it). It also makes spectres harder to spot like the original game as well.

Arguably the biggest problem with software rendering is the viewpoint heavily distorts when not looking centred. If you're playing with no freelook this isn't a problem, but you can get used to it after some time.

Anyway, GZDoom does have software rendering and the quickest way to set that shit up is by using Vanilla Essence. It's been a while since I've used it but I believe LZDoom can use Vanilla Essence as well, as it's based on GZDoom (LZ version 3.8.5 = GZ 3.8.5 but using a more compatible renderer.
