Yeah, cameras often sharpen. Software like Darktable will look at the EXIF information and try to select a similar base curve and sharpening by default.

The debayering method will have a strong effect on your photos, depending on the optical antialiasing your camera has and the ratio of camera resolution to CRT mask resolution. In my case, I have an 8MP camera, which has a resolution of 3474 horizontally. My BVM has an aperture grille width of 0.3mm per 3 colors, leading to a total of 4000 vertical stripes in a frame, which is bad news for aliasing and moire. I've been solving this by intentionally slightly defocusing. See pic for example of focused vs defocused. Other options are taking pictures of the CRT only filling a small portion of the camera frame, or taking a picture of a small portion of the CRT.
