I love how The Rumble Fish tackles this. Each character is made up of MULTIPLE sprites that can be rotated and stretched as needed. Attacks still have very readable frames, but the added smoothness from the mutiple rotating sprites add a lot. It's sort of a half-step between traditional sprite work and what Arc System Works is doing as of late.
