Had a flightstick, bombs were tied to a little jut-off red button like this one. I remember it feeling super militaristic and detailed too, though that might just be rose-tinted glasses.

Definitely no hydraulics, but I can't say if it was a two seater or not; for sure recall the two-player attract mode playing, but I never had reason to try it nor stopped to think if that was actually supported by multiple joysticks or not. There wouldn't have been much of a barrier though; either one singular bench or two individual seats arranged something like a car's interior, with a small block dividing the two.

Black all over and only one screen though; I want to say it had no marquee graphics at all, which made it stand out even more. Probably lends more credence to the 'custom build' theory, but it was a small place and the games were aging so I always just assumed it just lost its branding panels somewhere along the road.
They did care enough to add in a randomized Pokemon toploader dispenser right during the initial TCG craze though, so I wouldn't discount it.
