Incorrect. You cannot level up the grip guage as Snake. There's just enough grip to bypass the guards in the assembly room just fine.

There's wind simulation in all outdoor areas of the Plant. Most notably when you have to shoot the SEMTEX control unit behind the Sons of Liberty flag.
Other than all that shit there's the following in the Plant:
>Soft body physics on flag in the conference room
>Bird AI (which will even attack Fatman)
>Mirrors with realistic reflections
>Mechanics involving the sea lice
>Emma AI
>Snake AI
>Heat haze/shimmer effect on fire
>Cardboard box conveyor belt transportation
>Directional microphone
The Plant seems more feature rich overall.
