There's an overall skillset of learning to play that translates from game to game generally speaking. So you can always play more popular games to build that up and then play whatever.

All the Ranma fighting games were pretty trash along with most of the anime fighters of the era, but it's still fun in a silly way.

Bushido Blade on the other hand is a legit great game, but much more like a spiritual successor to Budokan than a normal fighter.

Tastes vary of course, so like what you like. But to me something with great aesthetics but boring or badly done game design is ultimately a bad game. Where as a game with even very simple graphics but entertaining and well done game design is good. Not just in fighters, in any genre.

Sadly the easiest ones to master are some of the worst, which makes mastering them kind of pointless. Also it depends why you want to master. Just to beat the game, or to play well with others.
