It probably IS composite tbqh.

You need to remember that back in '81 very few pieces of AV kit in the home actually used it though. That is, if you were wealthy enough to have anything beyond the TV receiver itself.

VCRs would use RF loop-through.
Games consoles and home computers were RF.
Errr...that's about it.

They can probably be converted for RGB. Either directly into the neckboard with appropriate attention paid to the signal levels, or through the jungle IC if they have some sort of overlaid OSD.

Not saying it's worth doing, of course. Just that it's feasible.

It looks like it can accept 480p and also sync on green.

Lucky really because that's the only way to get 480p out of a PS2. Hook it up the way I told you with the light gun breakout adaptor and just select sync on green on the monitor when you want to display 480p.
