The stone guardian's poison attack is "status" type damage, so loading up on that type of defense can make the fight easier. Some pieces of gear with status resistance include various robes, the rainbow hat, kris knife, and cat's eye. The stone guardian uses poison mist on the first turn and has a ~1/8 chance of using it every subsequent turn.
If you have the right setup you can actually win effortlessly, even using the fight to spark skills early. (don't read this) You can stun him and there's a spell you can use to ensure your stun moves hit and a formation to ensure you act first. But this overpowered technique trivializes a large portion of the game so I hope you didn't read this.

If you got stomped by Dantarg go do some other quests and come back. Grinding making the game harder is a myth (you fight stronger enemies but you'll overpower them anyway). However it's not recommended to grind because grinding isn't fun and making the game easier isn't fun.

There's probably more for you to do in the desert and in the eastern land. Have you heard of the wandering minstrel?
