The first and the final level are good.
The asteroid shooting level (I think level 3 or 4) is fine, simple arcade shooting, not as good as the other flight levels though.
The on-foot levels, which are the majority of the game, are not great by today's standards, but it's playable. Being able to switch between 1st and 3rd person camera helps a lot. Just avoid the useless cinematic camera.

Battle of Hoth and Skyhook Battle were 10/10 stages.

The on-foot levels were hit and miss, I actually really like the 2nd level on your pic, it has a great atmosphere and good level design, fun enemies too. Some others drag on a bit too much and aren't as exciting (the level before Xizor's Palace, the level where you face Bobba, etc).

How about Shadows of the Empire?

I honestly liked it although it also has some difficulty problems too, it's still doable and the last level is a great reward for going through tortuous stages like the sewer.

I finally beat this game recently after never being able to beat it as a kid (in part due to having a bootleg cart that didn't save)
The Black Sun gladiator in Xizor's Palace is one really annoying boss fight, and you're fucked if you didn't stock up missiles throughout the game up to that point.

The good thing is that the last mission is one of the best parts in the game, like a reward for enduring the tough on-foot levels that make the majority of the game.
