Okay, let's start at the end(?), GTA III is the only game that "really" happened 1:1, in real-time.
Vice City Stories is Lance's recollection of his brother and his adventures when the two first arrived in Vice City, maybe it's survivor's guilt, but Lance puts Vic on a pedestal, hence why Vic practically babysits Lance the whole game.
Vice City is a movie by Tommy Vercetti showing his rise to power, more or less, decide for yourself what mission threads are in the movie and what had to be taken out for time.
San Andreas, okay you're gonna have to just keep up with me on this because this is REALLY autistic, Carl is a small-time criminal from LS, goes to LC, and comes back to LS, everything up until the Desert actually happens, Carl DID buy the air field, but the only mission that really happens is N.O.E where you have to drop supplies off on the other side of the map, everything else is a dehydration hallucination because Carl's too stupid to hydrate while watching flight videos and spy movies, The Truth missions are Carl and the Truth tripping out on Peyote in the desert, talking while Truth tells Carl about all the stuff he knows, the game picks back up with reality when Woozie calls Carl and tells him about Las Venturas, the two become partners Carl saves Madd Dogg and that's how CJ became a success, Toreno was grateful for CJ not only taking down the Loco Syndicate and delivering those supplies, and Sweet is miraculously let go.
LCS is another game that happened in real-time but it's not 1:1, some parts are more embellished, and could be chalked up to dreams and Tony leaving the TV on after a hard day.
Manhunt is a MSNBC documentary/news story, spliced in with snuff films because some high schooler wanted to be edgy, taped over, as we all know a Children's Show about a robochef.
Bully is Jimmy's story about Bullworth, some things like busting people out of asylums never happened, but to spark interest to the audience is sprinkled throughout the story.
