Alright, with a bit more persistence I've been able to get into the service menu. Now the option that I think I want to change (H-Centre) is, annoyingly, the only one I can't make changes to. I'm not sure why.

Also, confusingly, using PAL sources instead of NTSC ones has actually made everything okay (correct aspect ratio, no shift to the left). I'm not sure why that would be (obvious CRT newbie here) but it would explain a few things I guess.
